It has been an ideal year for cold pre-fermentive soaking, given
the perfect healthiness and ripeness of the grape : The aromatic
extraction has been highly satisfactory. The alcoholic fermentations
followed perfect kinetics due to the strict controls that were carried
out, together with the extraction of round and ripe tannins that
can only be obtained out of grapes of the highest quality.
The malolactic conversions in cask have begun to blend these wines
and the current evolution is satisfactory. When this is completed,
we foresee wines that will be elegant, fruity and mineral on the
nose, whilst concentrated and gentle in the mouth.
